Avocado sweet potato toast

My new favorite weekend breakfast… 

INGREDIENTS

  • 1 pre-cooked sweet potato sliced lengthwise to make 3-4 “toast” pieces

  • 1 TBS ghee

  • 1/2 Avocado

  • 1 egg

  • 1 cup steamed brussel sprouts

  • Sauerkraut

  • Salt and Pepper to taste

INSTRUCTIONS

Toast pre-cooked sweet potato slices in ghee until toasted/browned. Set aside on serving plate.  Smash avocado and spread on toast.
Fry egg to top on toast.
Add side of Brussel sprouts or 1-2 cups of sautéed spinach or kale.
Add side of sauerkraut.
Salt and Pepper to taste
