Avocado sweet potato toast
My new favorite weekend breakfast…
INGREDIENTS

1 pre-cooked sweet potato sliced lengthwise to make 3-4 “toast” pieces
1 TBS ghee
1/2 Avocado
1 egg
1 cup steamed brussel sprouts
Sauerkraut
Salt and Pepper to taste
INSTRUCTIONS
Toast pre-cooked sweet potato slices in ghee until toasted/browned. Set aside on serving plate. Smash avocado and spread on toast.
Fry egg to top on toast.
Add side of Brussel sprouts or 1-2 cups of sautéed spinach or kale.
Add side of sauerkraut.
Salt and Pepper to taste
