Summer soba salad

This was a total WIN and was ready to consume in under 30 minutes! 

INGREDIENTS

SALAD
8oz Soba noodles
1.5 cups shelled edamame
Handful of organic broccoli-carrot slaw mix
1 orange bell pepper chopped
1 cup shredded red cabbage
2 scallions (green only) chopped
Handful of fresh cilantro (optional but so key)

DRESSING
In a blender…
1.5 TBS of tamari
1/3 cup tahini or almond butter
1 TBS orange zest
Half of med-large orange freshly squeezed
2 TBS lime juice
2 cloves garlic
1 thumbnail size of fresh ginger (1tsp ground)
1 tsp toasted sesame oil
Pinch of red pepper flakes

INSTRUCTIONS


Boil soba noodles in salted water and 1 TBS toasted sesame oil for 6-8 minutes (stir often). While noodles are cooking, place all vegetables in large bowl and blend dressing. When noodles are done cooking, drain and wash under cold water, and immediately put back into pot and mix with 1-2 tsp of toasted sesame oil to keep seperated. Add noodles to large bowl of veggies and mix with dressing. Top with cilantro, crushed peanuts, choice of protein (optional) and CONSUME!!
